David & Miriam Palmer


David's love for all things Argentine began in 1973 when he first met his future wife.

His new found passion led him to become a pioneer of Argentine speciality food production in the  UK which has evolved now into Lomito.

Originally from Santa Fe, Argentina, Miriam first arrived in the UK as a young student. Miriam introduced David to Argentine culture and has become very much an ambassador for the restaurant.

Paritosh Ray (Pom)


Having completed a degree in International Hotel & Catering Mgt, Pom began his management career in 1997 at the original Gaucho Grill in Piccadilly. After playing a significant role in the expansion of Gaucho over a fourteen year period, Pom partnered with Nicholas & David to bring his business and operational skills to Lomito.

Nicholas Palmer


Following an early restaurant management career at Gaucho, Nicholas opted to join his father at David Palmer Catering in 2005. Nicholas decided to diversify the offering from DPC and conceptualised the first market Lomito in Camden Stables. The original concept has evolutionised into the Lomito offering today.
